Healthy Gourmet Truffles [vegan]
Why spend so much money on store-bought chocolate truffles when you can easily recreate them at home? These decadent, melt-in-your-mouth truffles are rich, creamy, and extremely simple to make. Bring them to a dinner party, and someone will sure be begging for your recipe.
Dark Chocolate Truffles
Ingredients
- 1 1/3 cup non-dairy dark chocolate, finely chopped 
- 1/2 cup coconut milk 
- Toppings of choice (I used unsweetened cocoa, chopped hazelnuts, and Dark Chocolate Covered Chia Seeds) 
Instructions
- Heat coconut milk until warm. 
- Pour coconut milk over the chocolate in a bowl. Set aside for 5 minutes. 
- Stir mixture until completely smooth. 
- Chill in the refrigerator for 2-3 hours, or until almost completely solid. To test, insert a knife into the chocolate. If knife comes out mostly clean, the chocolate is ready. 
- Use tablespoon to scoop out bite-sized balls. Gently roll into balls between your hands, then toss in toppings. 
- Refrigerate overnight. 
- Let truffles come to room temperature for 10-15 minutes before serving. Enjoy! 
Almond Butter Truffles
Ingredients
- 1 cup almond butter 
- 1/4 cup maple syrup 
- 2 tablespoons coconut flour 
- pinch of sea salt 
Instructions
- Mix together almond butter and maple syrup until combined. 
- Add coconut flour and salt. Stir until mixture forms into dough. 
- Roll dough into bite-sized balls and place on a parchment-lined baking sheet. 
- Melt chocolate chips until smooth. Drizzle melted chocolate over the balls. 
- Refrigerate overnight. 
- Let truffles come to room temperature for 10-15 minutes before serving. Enjoy!
